Serves: 4-5 people Prep Time: 10 minutes Cook Time: 30 Minutes
Ingredients:
- 1 lb. of Rigatoni
- 16 oz of Whole-milk Ricotta
- tsp of lemon zest
- juice from 1 small lemon
- 1/2 cup of grated Romano
- 1/2 cup of pasta water
- pinch of salt
- pinch of white pepper
Instructions:
- Begin cooking pasta according to package directions.
- While the pasta cooks, prepare the lemon zest and grate the Romano cheese.
- In a large bowl, combine the ricotta cheese, lemon juice, salt, and white pepper. Mix until smooth.
- Two minutes before the pasta is cooked to al dente, reserve 1/2 cup of the pasta water.
- Drain the pasta and add it to the bowl with the ricotta mixture. Add the reserved pasta water and the grated Romano cheese.
- Mix well and serve immediately.
