Lemon Ricotta Pasta

Serves: 4-5 people     Prep Time:  10 minutes      Cook Time:  30 Minutes


Ingredients:

  • 1 lb. of Rigatoni
  • 16 oz of Whole-milk Ricotta
  • tsp of lemon zest
  • juice from 1 small lemon
  • 1/2 cup of grated Romano
  • 1/2 cup of pasta water
  • pinch of salt
  • pinch of white pepper


Instructions:

  1. Begin cooking pasta according to package directions.
  2. While the pasta cooks, prepare the lemon zest and grate the Romano cheese.
  3. In a large bowl, combine the ricotta cheese, lemon juice, salt, and white pepper. Mix until smooth.
  4. Two minutes before the pasta is cooked to al dente, reserve 1/2 cup of the pasta water.
  5. Drain the pasta and add it to the bowl with the ricotta mixture. Add the reserved pasta water and the grated Romano cheese.
  6. Mix well and serve immediately.
