Yields: 3-4 Servings

Ingredients:
* 3 yellow potatoes
* 2 cups of 00 flour
* 1 egg
* 1 tsp. of salt
Instructions:
1. Cook Potatoes: Peel the potatoes and boil them in salted water (add 1 teaspoon salt to the water) for approximately 20 minutes, or until tender.
2. Mash Potatoes: Drain the cooked potatoes and press them through a ricer. Allow the mashed potatoes to cool slightly.
3. Combine Ingredients: On a lightly floured surface, combine the mashed potatoes, egg, and flour.
4. Knead and Rest: Knead the dough for 5 minutes until smooth. Wrap the dough in plastic wrap and let it rest for 20 minutes.
5. Roll and Cut: Divide the dough into 4 equal pieces. Roll each piece out into a long, thin rope, approximately 10 inches in length.
6. Shape Gnocchi: Cut each rope into 1-inch pieces. Use a gnocchi board or the back of a fork to create the characteristic ridges on each piece.
7. Cook Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook for about 4 minutes, or until they float to the surface.
8. Serve: Drain the gnocchi and toss with our family tomato sauce. Serve immediately.
