Pizza Dough Recipe for 32 oz.
6 cups (720 grams) of High-Gluten flour
16 oz. (472 grams) of lukewarm bottled water (98 degrees F)
2 tsp. (6 grams) of dried yeast
2 tsp. (11.38 grams) of sugar
2 tsp. (11.38 grams) of salt
2 TBSP of EVOO
Directions:
1. In a large mixing bowl, dissolve the yeast in the lukewarm water. 2. Once yeast is dissolved, add sugar, and stir until totally dissolved. 3. Then, add the salt and mix until dissolved.
4. Add olive oil and flour.
5. Mix for 10 minutes.
6. Once the dough is ready, cover and let rest for 15 minutes.
7. Remove dough from bowl, cut in half and then form into balls.
8. Place dough ball into a tray or bowls with EVOO and then cover airtight.
9. Let the dough rise for approx.20-25 minutes before placing it in refrigeration.
10. Dough must remain in refrigerator for 24 hours before using.
Pizza Sauce:
• 28 oz. can of Imported Crushed Tomato
• 1 tsp. of salt
• ¼ tsp. of black pepper
• 1 tsp. granulated garlic
• 1 tsp. of dried basil
• 1 TBSP of Olive Oil
Onion & Anchovy Oil:
Place a half of cup of diced yellow onion, one anchovy fillet and 1/4 cup of olive oil and let fry until slightly golden brown.
Pizza Preparation:
1. In an 18"X12" sheet pan, brush a 1/4 cup of olive oil on the surface and then spread the dough as much as you can. (it will not stretch very easily in this stage).
2. Place the tray of dough in a warm area and let rise for an hour.
3. Finish spreading the dough throughout the entire pan, forming the crust and then layer it with 5 ounces of watered down sauce on the entire pizza (except for the crust at the edges).
4. Place back into a warm area and let it rise for another hour.
6. Take it out of the oven and then spread 16 ounces of pizza sauce evenly.
5. Preheat oven to 475 degrees F and cook halfway for about 10 minutes.
7. Distribute the onion and anchovy oil on the entire pizza.
8. Finally, top it with a pinch of dried oregano and 1 lb. of whole milk mozzarella. You may add your favorite toppings as well.
9. Place back into the oven and let cook for anther 10 minutes or until the cheese is melted and slightly bubbly.
