Pizza Dough Recipe for 32 oz.
6 cups (720 grams) of High-Gluten flour
16 oz. (472 grams) of lukewarm bottled water (98 degrees F)
2 tsp. (6 grams) of dried yeast
2 tsp. (11.38 grams) of sugar
2 tsp. (11.38 grams) of salt
2 TBSP of EVOO
Directions:
Instructions for Dough
1. Activate Yeast: In a large mixing bowl, dissolve yeast in lukewarm water.
2. Add Sugar: Stir in sugar until completely dissolved.
3. Incorporate Salt: Add salt and stir until dissolved.
4. Combine Wet and Dry Ingredients: Add olive oil and flour to the bowl.
5. Mix Dough: Mix the dough for 10 minutes using a stand mixer or by hand until smooth and elastic.
6. Short Rest: Cover the bowl with plastic wrap or a damp cloth and let the dough rest for 15 minutes.
7. Shape Dough: Remove the dough from the bowl and divide it in half. Shape each half into a ball.
8. Proof Dough: Place each dough ball in a separate bowl or tray lightly greased with olive oil. Cover tightly with plastic wrap or an airtight lid.
9. Cold Proof: Allow the dough to rise at room temperature for approximately 20-25 minutes. Then, refrigerate the dough for 24 hours.
Pizza Sauce Ingredients:
•28 oz. can of Imported Crushed Tomato
•1 tsp. of salt
•¼ tsp. of black pepper
•1 tsp. granulated garlic
•1 tsp. of dried basil
•1 tbsp. of olive oil
Instructions: Pour tomato into a bowl. Rinse can with a ¼ cup of water. Then, mix all ingredients together and chill for one hour.
Onion & Anchovy Oil:
Place a half of cup of diced yellow onion, one anchovy fillet and 1/4 cup of olive oil and let fry until slightly golden brown.
Pizza Preparation:
1. Prepare the Dough: Brush a ¼ cup of olive oil onto an 18" x 12" sheet pan. Spread the dough as much as possible within the pan. (Note: The dough will not stretch easily at this stage.) Place the pan with the dough in a warm area for one hour to rise.
2. Shape the Crust: Spread the dough evenly throughout the pan to form the crust. Top with 5 ounces of diluted pizza sauce, leaving a small border around the edges. Place the pan back in a warm area for another hour to rise.
3. Pre-bake: Preheat the oven to 475°F. Bake the pizza for approximately 10 minutes.
4. Add Sauce and Toppings: Spread 16 ounces of pizza sauce evenly over the dough.
5. Add Special Ingredients: Distribute the onion and anchovy oil evenly over the partially baked pizza.
6. Finish Baking: Top with a pinch of dried oregano and 1 pound of whole-milk mozzarella cheese. Add any desired toppings. Bake for an additional 10 minutes, or until the cheese is melted and slightly bubbly.
7. Serve and Enjoy: Remove the pizza from the oven and let it cool slightly before slicing and serving.r until the cheese is melted and slightly bubbly.
