Clams Casino Pasta

INGREDIENTS:

  • 2 Lbs of Bugatti Pasta
  • 2 dz. Little Neck Clams
  • 12 oz of baby or chopped clams
  • 5 oz of bacon
  • 1/2 cup of white wine
  • 2 TBSP of Shallots
  • 6 cloves of Garlic
  • 6 vine ripe tomatoes
  • Salt. Black pepper and red pepper to taste
  • 1/2 tsp of oregano
  • 1/4 tsp of thyme
  • 3 TBSP of Italian Parsley
  • 1 stick of unsalted butter
  • 1 cup of plain bread crumb
  • 1/4 cup of parmesan cheese

DIRECTIONS:

1. Rinse whole clams in shell


2. Dice shallots, garlic, parsley, tomatoes and bacon

3.  Heat large skillet on med-high and then cook bacon until crispy.

4. Now add the shallots and garlic-Cook until trans lucent.

4. Add clams in shell with bacon and then add the wine-Cover

5. once clams begin opening, add the canned clams with juice-1/2 tsp. of dried oregano, 1/2 tsp. of crushed red pepper, 1/4 tsp. of thyme, salt and pepper to taste.

6. Add diced tomatoes & 3 tbsp. of chopped Italian parsley.

7. Remove from heat and cook pasta and breadcrumb mixture

8. About 4 minutes before pasta is cooked, add butter to the Casino sauce and continue cooking on med high heat until pasta is fully cooked.

9. Once pasta is ready, combine the sauce with pasta and then top with the breadcrumb mixture.  Enjoy!


BREADCRUMB DIRECTIONS:

1. Add one clove of chopped garlic and 2 tbsp. of butter to med-high heated pan, and then cook for a minute

2. Add 1 cup of plain breadcrumb and 1/4 cup of parmesan cheese.

3. Turn off heat and mix well.
