Shrimp Oreganata

Ingredients: 

• 2 dozen gulf shrimp (16 -20 per lb.) 

• 8 OZ of breadcrumb 

• 8 cloves of garlic (chopped) 

• 2 TBSP of grated parmesan cheese 

• ½  tsp. of Dried Oregano 

• ¼ cup of olive oil 

• ¼ lb. of unsalted butter (1 stick) 

• 1/3 cup of white wine 

• Juice of 1 lemon & 1 lemon for garnish) 

• ½ tsp. of granulated garlic

 • ¼ cup of chopped Italian parsley 

• Salt & Pepper to taste


Instructions:

1. Clean and devein shrimp

2. Mix together breadcrumbs, parsley, Parmesan cheese, granulated garlic, salt & pepper.

3. Add chopped garlic & olive oil and fry until translucent.

4. Add shrimp, wine, salt & pepper to taste and cook for 2 minutes.

5. Add butter, lemon juice, parsley and cook for 1 minute.  

6. Mix in 2 oz. of the breadcrumbs mixture and cook for a minute.

7. Sprinkle an even layer of breadcrumbs on top and then place in the oven on broil for about a minute or two.  Keep an eye on it because it can burn quickly.
