- Stuffing Ingredients:
- 1/3 c. of chopped celery
- 12 oz of crabmeat
- 7-8 cloves of garlic (chopped)
- ½ yellow onion (diced)
- ¼ lb. of unsalted butter
- 2 TBSP of chopped Parsley
- 1 & ½ c. of plain breadcrumbs
- ¼ c. of grated parmesan cheese
- 3 eggs
- Tsp. of salt
- ¼ spoon of black pepper
Directions:
- heat large pan on med-high heat, add celery, garlic, onion and butter.
- Once the veggies are translucent, add the crab and 1 TBSP parsley and let cook for 2 minutes.
- Once the crab has cooled down, add it large mixing bowl and then add breadcrumb, 1 TBSP of parsley, parmesan, eggs, salt and of black pepper (Mix well).
- Now stuff 10-14 calamari tubes (set aside).
Marinara Sauce Ingredients:
- ½ c. of olive oil
- 8 gloves of garlic (smashed)
- ¼ cup of fresh basil leaves
- 56 oz. of Imported Plum tomatoes (Pureed in a blender)
- 2 tsp. salt
- ½ tsp. of black pepper
Directions:
- Heat a large pot on med-high heat and then add the olive oil, garlic
- Once the garlic is a light golden color, add the basil, pureed tomato, salt and black pepper and let cook foe 30 minutes (frequently stir).
- After the sauce has cooked for 30 minutes, reduce the heat to low and then add the stuffed calamari into the pot and continue cooking for 30 minutes.
