Ingredients:
Instructions:
1. Cook lobster in boiling water for 5 minutes
2. Rough cut all the veggies
3. Remove lobster from water and let cool
4. In a large pot, add olive oil, veggies, peppercorns, thyme, tarragon, ½ cup of Sherry and salt – cook until veggies are fully softened.
5. Add tomato paste and continue cooking for 2 minutes
6. Remove meat from tails and claws (reserve shells).
7. In the veggie pot, place shells, clam juice, water, and salt to taste. Cook for one hour on high heat.
8. Remove shells and strain veggies
9. Bring liquid back to a boil and then add cream and ½ cup of Sherry.
10. While waiting for liquid to boil prepare the rue (5 TBSP of butter & 5 TBSP of flour)
11. Once boiling, add rue and stir until smooth, then add lobster meat and remove from heat.
12. Garnish with a sprinkle of Paprika and Enjoy!
