Fried Yellow Squash

Yields: 4-6 Servings 

Prep time: 15 minutes 

Cook time: 15-20 minutes 


Ingredients:  

• 2 large yellow squash, sliced into 1/4-inch-thick rounds 

• 2 cups all-purpose flour 

• Salt • Black Pepper 

• Granulated garlic powder 

• 5 eggs 

• 2 tbsp. grated Parmesan cheese 

• 18 oz. of Italian-Style breadcrumbs 

• 2 cups of Canola or Vegetable oil 


Instructions: 

  1. Dredge: In a shallow dish, combine flour, salt, black pepper, and garlic powder.
  2. Prepare Egg Wash: In a separate shallow dish, whisk together egg, salt, black pepper, Parmesan cheese, and granulated garlic.
  3. Coat Squash: Dip squash slices into the flour mixture to coat. Then, dip each slice in the egg wash. Finally, coat evenly in breadcrumbs.
  4. Fry: Heat 1/2 inch of oil in a large skillet over medium heat. Fry squash slices in batches for 2-3 minutes per side, or until golden brown and crisp.
  5. Drain: Remove the fried squash slices from the skillet and drain them on paper towels to remove excess oil.

 Serve: Serve the squash slices immediately while still warm with a side of marinara or garlic aioli


Marina Sauce Ingredients: 

• 28 oz can of whole plum tomato (processed in blender) 

• 2 cloves of garlic (chopped) 

• ¼ cup pf olive oil 

• 4 fresh basil leaves 

• ¼ tsp. black pepper 

• 1 tsp. of salt 

Instructions: 

1. Fry garlic in olive oil until light golden brown 

2. Add black pepper, tomato, salt and basil-let cook for 20 minutes on medium-low heat 


Garlic Aioli Recipe: 

• ½ cup of Mayo 

• TBSP of fresh lemon juice 

• 2 TBSP of olive oil 

• 1 clove of garlic (pressed) 

• Pinch of salt & pepper 

Instructions: 

Mix all together and let chill for 30 minutes
