Fried Yellow Squash

Ingredients: 

• 2 large yellow squash, sliced into 1/4-inch thick rounds 

• 2 cups all-purpose flour 

• Salt 

• Black Pepper 

• Granulated garlic powder 

• 5 eggs 

• 2 TBSP grated Parmesan cheese 

• 18 oz. of Italian-Style breadcrumbs 

• Canola or Vegetable oil

 Instructions: 

1. In a shallow dish, combine the flour, salt, pepper & garlic powder 2. In a separate shallow dish, whisk together the egg, salt, pepper, parmesan and granulated garlic 

3. Dip the squash slices in the flour mixture, then coat in the egg wash 

4. Finally, dip the squash in the breadcrumbs and coat evenly 

5. Heat 1/2 inch of oil in a large skillet over medium heat. 

6. Fry the squash slices in batches for 2-3 minutes per side, or until golden brown. 

7. Drain the squash on paper towels. 

8. Serve immediately. 


Marina Sauce Ingredients: 

• 28 oz can of whole plum tomato (processed in blender) 

• 2 cloves of garlic (chopped) 

• ¼ cup pf olive oil 

• 4 fresh basil leaves 

• ¼ tsp. black pepper 

• 1 tsp. of salt 

Instructions: 

1. Fry garlic in olive oil until light golden brown 

2. Add black pepper, tomato, salt and basil-let cook for 20 minutes on medium-low heat 


Garlic Aioli Recipe: 

• ½ cup of Mayo 

• TBSP of fresh lemon juice 

• 2 TBSP of olive oil 

• 1 clove of garlic (pressed) 

• Pinch of salt & pepper 

Instructions: 

Mix all together and let chill for 30 minutes
