New England Clam Chowder

Ingredients

• 54 oz. of Canned Chopped Clams 

• 3 large Potatoes 

• ½ Stalk of Celery 

• 1 lb. of Thick Cut Bacon 

• 2 cups of Chicken Broth 

• ½ Stick of unsalted butter 

• 1 & ½ Quarts of Heavy Cream 

• 1 Yellow Onion 

• ½ Cup of Green Onion 

• 7 cloves of Garlic 

•  1/2 tsp. of Nutmeg 

• Salt & Pepper to taste 

• Oyster Crackers 

Instructions:

1. Dice celery, onion and garlic and potatoes

2. Dice bacon and fry until crispy (remove and reserve).

3. Add the celery, onion and garlic, bacon grease and butter into a 10 qt. pot and cook until translucent. 

4. Add the flour and mix well and cook for 2 minutes (Roux)

5. Add Clams and diced potatoes and cook for 5 minutes continually stirring. 

6. Add Chicken Stock and cook for 30 minutes.

7. Add Heavy Cream, nutmeg, cooked bacon, salt & pepper to taste - cook until it comes to a boil.

8. Add chopped green onion

9. Enjoy!

Garnish individual bowls with a pinch of paprika.

Serve with Oyster Crackers
