Ingredients:
• 3 lbs. of chuck roast
• 1 Medium yellow onion
• 5 Stalks of Celery
• 5 Carrots
• 28 oz can of Crushed Tomato
• 2 cans of Cannellini beans
• 1/4 cup of olive oil
• 12 cups of beef broth
• 16 oz of cheese tortellini or any short pasta
• Salt & pepper to taste
Instructions:
1. Dice your vegetables and slice chuck roast into 4-5 equal pieces.
2. Heat ¼ cup of olive oil and brown chuck roast on both sides
3. Once meat is brown, remove and then add the veggies and cook for 5 minutes.
4. Add meat back into pot and then add beef broth, crushed tomatoes and salt & pepper to taste.
5. Once the soup comes to a boil, lower heat and let simmer for about 1 & 1/2 hours.
6. Then add pasta and cannellini beans and continue to cook for another 12 minutes.
