Roasted Peppers

Yields: 6-8 Servings           

Prep time: 15 minutes        

Cook time: 15-20 minutes 


Ingredients:  

• 8 red bell peppers 

• 1/3 cup olive oil 

• 5-6 cloves garlic (smashed) 

• Salt and pepper to taste 


Instructions: 

  1. Prepare Peppers: Brush each bell pepper with olive oil and season generously with salt and freshly ground black pepper. 
  2. Roast Peppers: Place the peppers on a grill or under a broiler and cook, turning occasionally, until the skin is charred and blistered. 
  3. Cool and Peel: Once cool enough to handle, peel off the charred skin and remove the seeds and ribs. 
  4. Slice: Cut the roasted peppers into thin strips. 
  5. Heat Oil: Heat a large skillet over medium heat. Add a drizzle of olive oil. 
  6. Sauté Garlic: Add minced garlic to the skillet and cook for 1 minute, or until fragrant. 
  7. Cook Peppers: Add the roasted pepper strips to the skillet and cook for 5 minutes, stirring occasionally. 
  8. Season: Season the peppers with salt and pepper to taste.
  9. Serve: Serve the roasted peppers warm or at room temperature.
